Yes. Booking, pricing and availability work independently. WooCommerce is optional.

How are Airbnb and Booking.com connected?

Through iCal availability feeds. This is not a complete channel-manager API.

Can other systems be connected?

Yes. An additional adapter can be offered after reviewing API documentation, access rights and the required workflow.
